Chocolate Energy Balls (No bake) - sugar and gluten free, plant based

These gluten and sugar free chocolate energy bars are easy yo make, very filling and packed with nutrients!

Completely plant-based and naturally sweetened with dates, this can be enjoyed as a snack, sweet treat or energy booster.

Ingredients
  • 1/4 cup sprouted oatmeal (or regular)
  • 1/4 cup sesame seeds
  • 1/4 cup shredded coconut (unsweetened)
  • 1/4 cup hazelnuts
  • 2 tbsp flax seed meal
  • 1/2 cup soft dates
  • 2 tbsp cacao powder (1-2 tbsp more for increased chocolate taste)
  • 1 tsp vanilla extract
  • 1-2 tbsp water (to achieve desired dough consistency)

Instructions
  1. Add in the oatmeal, sesame seeds, shredded coconut flax seed meal and hazelnuts to food processor.
  2. Process on high speed for 20 – 30 seconds until a medium texture is achieved if you prefer some “chew” to the ball. For a smoother texture, process until a fine powder forms.
  3. Add in dates, cacao powder, and vanilla.
  4. Process for 10 – 15 seconds until all ingredients are combined.
  5. Test dough between fingers; if you are able to create a ball easily without crumbling, no more moisture is needed. If the ball crumbles add in 1 tbsp filtered water and mix; if still not sticky enough add in more water.
  6. Using a 1 tsp measure, scoop dough and roll into ball. If dough sticks on your hand, wet hands with water and form balls.
  7. Makes approximately 15 bite-size balls.
  8. Enjoy! Try not to eat them all in one sitting, they’re super addictive 😊

​Storage
Store in air-tight container in fridge for up to one week.
